Fiesta Rosita opens its doors, brings authentic Mexican food to Ellsworth

ELLSWORTH — When looking for a place to eat in Ellsworth, there are a variety of places to choose from that span many food types. The list just got one name longer, as Fiesta Rosita, an authentic Mexican restaurant, is opening its doors.

The restaurant is located at 467 W. Main St. in Ellsworth near the stoplight at the west end of town.

Fiesta Rosita had its opening day May 24 and its ribbon cutting is May 30 at 3 p.m. The restaurant plans to be open seven days a week from 11 a.m.-9 p.m.

Owners Rose Caulum and Francisco Lugo Valencia are pairing to bring new flavors to town, and have already hit the ground running on their opening day.

Caulum grew up in La Farge, Wis., and has lived in Wisconsin for most of her life. Caulum said Lugo Valencia has also lived in Wisconsin for decades, and was originally from Jalisco, Mexico. Lugo Valencia has spent a long time in the restaurant industry, according to Caulum.

The two opened the first Fiesta Rosita location in Spring Grove, Minn., in November, and felt ready to open another.

“We kind of went into the restaurant business together, and we really wanted to come back to our home state,” Caulum said.

While coming back to Wisconsin was a target for the two, Ellsworth was the determined destination due to the community and beauty of the area.

“We were driving around this area, it’s gorgeous, it seems super friendly, it looked like a really good spot to open a Mexican restaurant,” Caulum said.

Since arriving in Ellsworth, Caulum said they have felt nothing but love and appreciation from the locals, and it has translated to their Facebook account.

“As soon as I posted on Facebook a Facebook page, I had a lot of interactions. I think it was within one hour, I had 100 people already following and watching and interacting,” Caulum said.

The most enjoyment Caulum has gotten from the restaurant business is just spending time with family through the highs and lows.

“It’s a family business, so we’re able to visit with family and be around each other,” Caulum said. “It becomes really a way of life rather than a job.”

Street tacos, Burrito Fiesta Rosita and Fajitas Texanas are some of the most popular items at the Spring Grove location, according to Caulum. Overall, the pair are just excited to be able to provide a place to eat for Ellsworth’s hungry residents.

“It’s always exciting to come to a new area,” Caulum said. “There’s a special feeling in the service industry when people are enjoying food that you are making.”
